Easy Recipes with Ground Beef – Spicy Beef Samosas

Indian samosas may look hard to make, with so many spices and are deep-fried to finish them off. This recipe has simplified the samosa recipe by using phyllo pastry, and baking them in the oven. They are perfect for dipping in a chutney or yogurt-based sauce as finger food or an appetizer to set off your take of an Indian dinner.

Easy Recipes with Ground Beef – Ingredients

Makes 12 servings

  • 1 cup Lean Ground Beef
  • 1 Onion, finely chopped
  • 1 tbsp Curry Powder
  • ½ tsp ground Cumin
  • 198g can Chickpeas, drained and rinsed
  • 1 cup Frozen Peas, thawed
  • 20g fresh Coriander, coarsely chopped
  • 6 sheets Phyllo Pastry
  • 3 tbsp Olive Oil
  • 1 tbsp Mustard Seeds

Easy Recipes with Ground Beef – Directions

  1. Preheat the oven to 190°C.
  2. In a large frying pan over medium heat, brown the ground beef for about 5 minutes, stirring frequently, until evenly browned. Add the onion, curry powder and cumin, stirring and reduce the heat to low. Cover and cook for about 10 minutes, stirring occasionally until the onions are softened. Stir in the chickpeas, peas and coriander; heat through and season to taste.
  3. Cut the phyllo pastry lengthways into 12 strips, each measuring about 12 x 36cm. Make a neat pile of the strips, and loosely cover with plastic wrap so that they don’t dry out.
  4. Taking one strip of pastry at a time, lay it out lengthways and brush it lightly with oil. Place about 1 heaping tbsp of the beef at the end closest to you. Lift up the bottom left-hand corner of the strip and fold it diagonally over the filling. Continue folding diagonally to the end of the strip, ending with a triangular shape.
  5. Place the samosa on a baking sheet, brush lightly with a little oil and sprinkle with a few mustard seeds. Repeat with the remaining pastry and filling to make 12 samosas.
  6. Bake for 12 to 15 minutes until golden and crisp on top. Remove from the baking sheet to cool on a wire rack.

Easy Recipes with Ground Beef – Tips

For a vegetarian option, use 1 ¾ cups of drained and rinsed can of chickpeas with 1 cup of mixed peas or diced vegetables.

If the phyllo pastry sheets are very thin, double them up with a light layer of oil between, so that the pastry is strong enough to hold the filling.

The peppers are stuffed with a ground beef mixture and are then topped with breadcrumbs and cheese.

Makes 2 servings

  • 4 tbsp fresh Whole Wheat Breadcrumbs
  • 4 large Yellow Peppers
  • 1 tbsp Olive Oil
  • 1 Onion, finely chopped
  • 1 lb Lean Ground Beef
  • 1 Garlic Clove, crushed
  • 200g can chopped Tomatoes
  • 1 tbsp chopped fresh Sage, or 1 tsp dried
  • 1 tsp chopped fresh Rosemary, or ½ tsp dried
  • 1 1/3 cup Vegetable Stock, hot
  • 3 tbsp mature Cheddar Cheese, grated
  • 2 Fennel Bulbs, cut into 5mm slices lengthways

Easy Recipes with Ground Beef – Directions

  1. Preheat the oven to 190°C. Pour the breadcrumbs on a plate and leave them to dry while preparing the rest of the ingredients.
  2. Cut the tops off the peppers and scoop out the seeds and membranes. Blanch the peppers and their tops in a pot of boiling water for 1 minute. Remove from the heat and take the peppers out of the water, and let them drain, cut-side down, on paper towel.
  3. In a large frying pan over a medium heat, heat the oil and add the onion and cook for 10 minutes, stirring frequently, until softened. Turn up the heat then add the beef and garlic and fry, stirring and breaking up the meat, until browned and crumbly. Add the tomatoes, herbs and 3 tbsp of the stock. Cook for 1 minute, remove the pan from the heat and stir in the breadcrumbs. Season to taste with the sage and rosemary.
  4. Stand the peppers upright in a lightly oiled, large oven dish or roasting pan, spoon in the beef mixture and press it down gently. Sprinkle with the grated cheese and top the peppers with the cut pepper tops. Scatter the sliced fennel in a single layer around the peppers and pour the rest of the stock into the roasting pan around the peppers.
  5. Cover the dish with foil and bake for 40 minutes or until the peppers and fennel are tender, basting halfway through cooking with the stock in the dish. Serve hot or warm.
